Chef notes
I'm putting a sweet spin on bruschetta — and it’s perfect for strawberry season. This dish is fresh, flavorful and packed with protein, making it a delicious lunch or showstopping supper.
And for dessert, try this 3-Ingredient Strawberry Shortcake Cobbler!
Technique tips:
For thicker chicken breasts: Slice in half horizontally and pound to even thickness. This ensures faster, more even cooking and keeps the chicken juicy.
Make it dairy-free or vegan: Skip the cheese. For a plant-based version, try this topping over grilled tofu or chickpea patties.
Storage tips:
Strawberry bruschetta: Keeps in the fridge for up to two days. It’s also fantastic spooned over crostini, grilled fish, avocado toast, scrambled eggs or even cottage cheese.
Cooked chicken: Store leftovers in an airtight container for 3 to 4 days. For best results, store the chicken and topping separately and assemble just before serving.
