Chef notes
These are so, so delicious and really develop flavor as they sit. I love to prep these the night before I am grilling and let all the flavors meld in the fridge. The inclusion of all the fresh herbs makes these bright and the spices create amazing depth of flavor. Even better, they make the best leftovers (if you have any)! Pop these into a sandwich with some yogurt and a cucumber salad or chop them up and add to a rice or pasta dish.
Technique tip: I love to brush the beef kebabs with melted butter while they are grilling. It adds a bit of nuttiness and mellows out all of the spices. Also, while you are at it, go for a fattier ground beef option (love ground short rib blend here).
Swap option: Feel free to swap out ground lamb, or do a combination of ]lamb and beef.
